As Mother Nature settles for her slumber, the world begins to burnish. Leaves litter the landscape in an ochre confetti and the zephyr takes a sudden chill.

It’s at this time that I so long for those balmy summer days, full and swollen with heat and produce. That scent of verdant tomato vines laden with fruits, only needing to be picked and eaten while still warm from the sun.

So, my joy stems from the batches of tomato sauce I hoard in my freezer, a taste of summer on the darker days. This recipe is simple but the joy it brings is boundless.
