Winter warmer, the ubiquitous phrase, too often used without thought. It flows off the tongue, but what does it really entail? Cosy knits, warming bowls of soup, or spices, toasted and earthy paired with bitter amaro, icy cold yet burning hot in its complexity….One to make and sip by the fire after a bracing ramble through the barren landscape.

Ingredients

• 30ml Spiced Rum
• 20ml Suze
• 2 Charred Black Peppercorns
• 1 Charred Star Anise
• 5ml Ginger Syrup
• 50ml Orange & Ginger Kombucha

Instructions

1. Add all ingredients apart from the kombucha to a mixing glass, stir and sit for 30 minutes to infuse.
2. Add 3 cubes of ice and stir clockwise for 30 seconds or until the glass feels cold. Strain into a glass, top with the kombucha and garnish with blood orange. Serve immediately.
