Amaro Amoré It’s no secret how much I love an amaro, I have not gleaned the nickname ‘Spritzy Suze’ without good reason. This cocktail is an elegant nod to winter using a classic negroni. Winter Citrus and warming ginger add a depth to this bitter yet delicious serve.

I did say I love a good Amaro….

Amaro Amoré It’s no secret how much I love an amaro, I have not gleaned the nickname ‘Spritzy Suze’ without good reason. This cocktail is an elegant nod to winter using a classic negroni. Winter Citrus and warming ginger add a depth to this bitter yet delicious serve.

Ingredients

Ginger Syrup

• 10cm Ginger grated.
• 100g caster Sugar
• 100ml Water

For one Drink

• 25ml Gin, I Use Cambridge Curator’s Gin
• 25ml Sweet Vermouth
• 25ml Amaro, I use Bertu.
• 5ml Ginger Syrup
• 1 Piece Grapefruit Peel, oils expressed, to serve.
• Ice to serve.

Instructions

1. Begin with the syrup, add all ingredients to a small pan and heat until the sugar is dissolved. Increase the heat and bubble for 3-5 minutes until syrupy. Allow to cool to room temperetaure then strain and decant into a sterile bottle. Store in the fridge.
2. When ready, add all ingredients for one drink to a mixing glass with 3 cubes of ice, stir clockwise for 30 seconds then strain into a glass with two ice cubes, express the grapefruit oil on top and serve immediately.
