Lemon Meringue Cupcakes

Ingredients

For the Cakes

• 115g Unsalted Butter
• 120ml Olive Oil
• 300g Caster Sugar
• 4 Large Eggs, room temperature
• 1 tsp Vanilla Extract
• 410 Plain Flour
• 1 tsp Fine Salt
• 2 ½ tsp Baking Powder
• 1 Lemon, zest
• 290g Full Fat Natural Yogurt

For the Frosting

• 200g Caster Sugar
• 50ml Water
• 100g Egg White

Instructions

1. Mix all the dry ingredients for the cupcakes in a bowl until homogenous. Mix the whole milk with the lemon juice and set aside to curdle.
2. Make a well in the dry ingredients and mix through the curdled milk, finally stir through the hot coffee, taking care not to overmix.
3. Divide the batter between the cupcake moulds and bake on the middle shelf for 25 minutes or until risen and springy. Set aside to cool while you make the frosting.
4. Add the sugar and water to a small pan and gently heat to dissolve. Once no crystals remain, increase the heat and boil to between 118-121C, you will need a sugar thermometer.
5. While the sugar is heating begin to whip the egg whites on a low speed, this will ensure a stable foam. Once the egg whites are at medium peaks and the sugar has come to temperature, gently pour the sugar down this side of the bowl while the baters are going. Continue beating until the bowl feels cool and you have a thick, glossy meringue.
6. When the cupcakes are cool pipe the meringue on top, burnish with a blow torch then serve immediately.
