Ingredients

For one Drink

• 35ml Empress Gin
• 15ml Crème de Cacao Blanc
• 20ml Maraschino Liqueur
• 5ml Spruce Syrup
• 2 Dashes Peychaud’s Bitters
• Chocolate Dipped Figs and edible glitter to serve.
• Ice to Stir

For the Spruce Syrup

• 200g Caster Sugar
• 100g Spruce Tips

Instructions

1. Begin with the spruce syrup. Add a small layer of sugar in the base of a jar, followed by a layer of spruce tips. Continue layering until all are used up. Seal and place on a sunny windowsill for 2 weeks until a syrup forms, invert the jar daily. Strain out the solids and store the syrup in the fridge.
2. When ready, add the gin, crème de cacao, maraschino liqueur and spruce syrup to a mixing glass with 4 ice cubes. Stir clockwise for 30 seconds to chill then strain through a hawthorn strainer into a chilled martini glass and serve garnished with a chocolate dipped half fig and edible glitter.
