Sea Salt & Black Pepper Caramel Rum Truffles

Ingredients

• 250g Lindt 70% Dark Chocolate
• 100ml Double Cream
• 50ml Soured Cream
• 30g Salted Butter, diced.
• ½ tsp Sea Salt Flakes
• 1/4tsp Coarse Ground Black Pepper
• 1tbsp Caramel
• 3tbsp Golden Rum
• Generous sprinkle of cocoa powder

Instructions

1. Add the chocolate to a heatproof bowl set over a pan of simmering water and melt.
2. In a separate pan, add the cream, sour cream, and butter, bring to steaming point then add the rum, sea salt, caramel, and black pepper.
3. Pour the cream mixture into the melted chocolate and whisk to combine, remove from the heat, and cool to room temperature.
4. Once cool, pop in the fridge until scoopable.
5. Have a baking sheet ready and sprinkle with a generous coating of cocoa powder. Use a melon baller to create scoops of truffle mixture and shape them into balls with your hands. Roll them in the cocoa and keep in the fridge until ready to serve.
