What better way than with the company of fresh lemons, herbs, a touch of sea salt and the fragrant notes of Agua Panela….

Ingredients

• 10ml Agua Panela, see below.
• 60ml Citrus Forward Gin
• 20ml Limoncello
• 10ml Bianco Vermouth
• 10ml Fresh Lemon Juice
• 1 Basil sprig plus two leaves to garnish
• Tiny Pinch Sea Salt Flakes
• Ice to stir.

Agua Panela

• 100g Panela Sugar
• 100ml Water

Instructions

1. Begin with the Agua Panela, add the sugar and water to a small pan and heat over a low heat to dissolve, mashing with a spoon as you go. Once dissolved, increase the heat and boil for 3-5 minutes or until syrupy. Remove from the heat and allow to cool before decanting into a sterile bottle and chilling.
2. Once cold, add all the ingredients to a mixing glass, taking care to muddle in the basil, add 3 ice cubes and stir for 30 seconds clockwise, or until the glass feels cold.
3. Strain into a chilled martini glass and serve garnished with two basil leaves.
