Taking time to bake and shape these cookies is the perfect way to tell someone you care, time cannot be bought, it must be spent in the right ways.

Chamomile & Lemon Cookies

Baked slowly, glazed with a sheer veil of lemon, they’re made for candlelit tables, shared cups of something warm, and the quiet romance of saying I love you without needing any words at all

Ingredients

• Chamomile infusion
• 2 tbsp dried chamomile flowers
• 60 ml boiling water
• Dough
• 250 g unsalted butter, very soft
• 120 g icing sugar
• Zest of 2 unwaxed lemons
• 1 tsp vanilla bean paste
• 1 large egg yolk
• 350 g plain flour
• 50 g cornflour
• ½ tsp fine sea salt

Instructions

1. Pour boiling water over chamomile.
2. Cover and steep 10 minutes.
3. Strain and reduce gently in a pan until you have 1 tablespoon of strong, aromatic liquid. Cool completely.
4. In a bowl, beat butter, icing sugar and lemon zest until pale and creamy (not fluffy — you want density, not air).
5. Mix in vanilla and the chamomile concentrate.
6. Add the egg yolk and beat until smooth.
7. Sift together flour, cornflour and salt.
8. Fold into the butter mixture until a soft, smooth dough forms.
9. Do not overwork.
10. Shape into a disc, wrap and chill 45 minutes.
11. Roll dough 6–8 mm thick between parchment.
12. Lightly flour your stamp.
13. Stamp firmly, then cut around the design.
14. Transfer to lined trays.
15. Chill at least 4 hours minutes before baking — this locks in the pattern.
16. Bake at 160°C fan / 180°C conventional for 12–14 minutes
17. The cookies should remain pale with just a whisper of gold at the edges.
18. Cool completely on the tray — they firm as they set.
