Cambridge Gin Summer Spritz

Elegant, floral and citrussy, this is the sort of drink made for long golden evenings in the garden, somewhere between a classic French 75 and an English summer meadow.

Ingredients

• 25ml Cambridge Distillery Curator’s Gin
• 25ml elderflower gin liqueur
• 15ml fresh lemon juice
• 75ml chilled prosecco
• 25–50ml premium tonic water, to taste
• Ice
• To Garnish
• A twist of lemon peel
• Fresh elderflower or a thin lemon wheel

Instructions

1. Fill a large wine glass or balloon glass with ice.
2. Pour in the Curator’s Gin, elderflower gin liqueur and fresh lemon juice. Stir briefly to chill.
3. Top with chilled prosecco followed by a splash of tonic water for a gentle bitterness and lift.
4. Stir once, very lightly, to keep the bubbles lively.
5. Garnish with a lemon twist and fresh elderflower if in season.
