There’s something quietly intoxicating about hibiscus, its deep crimson hue, its sharp, floral tartness, like nature’s own aperitif. Paired with coconut water and lifted by gin, this martini leans into something slightly unexpected, a little wild, and beautifully balanced.

Hibiscus Coconut Miso Martini

There’s something quietly intoxicating about hibiscus, its deep crimson hue, its sharp, floral tartness, like nature’s own aperitif. Paired with coconut water and lifted by gin, this martini leans into something slightly unexpected, a little wild, and beautifully balanced.

Ingredients

For the Syrup

• 40g dried hibiscus flowers
• 250ml water
• 120g caster sugar
• Zest of 1 lime
• 1 tsp fresh ginger, finely sliced
• Pinch of sea salt

For Two Drinks

• 100ml good quality gin
• 60ml hibiscus syrup
• 80ml coconut water
• 20ml fresh lime juice
• 10ml dry vermouth
• 1tsp white miso or

Instructions

1. Add hibiscus, water, lime zest, ginger, and salt to a saucepan.
2. Bring to a gentle simmer for 5–7 minutes until deeply coloured and fragrant.
3. Remove from heat, stir in sugar until dissolved.
4. Let steep for 10–15 minutes, then strain.
5. Cool completely — it should be sharp, bright, and almost cranberry-like.
6. Add all ingredients to a cocktail shaker filled with ice.
7. Shake well for 15–20 seconds until beautifully chilled.
8. Double strain into chilled martini glasses.
