Japanese Style Lemon Olive Oil Cake

Ingredients

• 150g Caster Sugar
• 2 Large Free-Range Eggs, room temperature
• 1tsp White Miso
• 2 Lemons, zest & Juice
• 1tsp Shichimi Togarashi
• 150ml Extra Virgin olive Oil
• 100ml Kefir
• 175g Self Raising Flour
• Icing Sugar and mini lemons to decorate

Instructions

1. Preheat oven 160C, grease and line an 8” springform pan and set aside.
2. Add the eggs and sugar to a bowl and whisk until pale and fluffy, 5-7 minutes. Add the miso, lemon zest and shichimi togarashi and whisk again.
3. In a bowl, combine the olive oil, lemon juice and kefir and drizzle into the egg mixture, whisk until just combined then fold in the flour.
4. Pour into your prepared pan and bake 40-45 minutes or until risen and springy. Allow to cool in the pan for 10 minutes before turning onto a wire rack to cool completely.
5. Dust with icing sugar and serve with fruits of your choice, this cake is so moist it needs no embellishment.
