Elderflower is all consuming, that heady aroma sings of halcyon days in the sun. paired with a fresh syrup, verdant and vegetal with cucumber and herbs, there is nothing closer to the English countryside

Ingredients

For One Drink

• 30ml Elderflower Liqueur
• 20ml Citrus Forward Gin
• 20ml Cucumber Herb Syrup (see below)
• 10ml Lemon Juice
• Soda Water & Ice to top up

Cucumber Herb Syrup

• 1 Cucumber, roughly chopped
• 1 Strip Lemon zest
• 20g Soft herbs, I use Mint, Lemon balm, lemon thyme and hyssop
• 400g Caster Sugar
• 400ml Water

Instructions

1. Begin with the syrup, Add the cucumber, sugar, lemon zest and water to a small pan and dissolve over a low heat. Bring to the boil and simmer for 3-5 minutes or until syrupy. Remove from the heat and add the herbs before allowing to cool to room temperature and infuse, this takes about 4-6 hours.
2. Once cool, strain through a muslin into a bottle and store in the fridge.
3. When ready, add the elderflower liqueur, gin, herb syrup and lemon juice to a spritz glass with a few ice cubes and chill for 2 minutes. top with soda, stir and serve straight away.
