An elegant serve to sip as Mother Nature shrouds the balmy evening with her warm blanket of night.

Ingredients

For One Drink

• 1 ½ tbsp Macerated Apricot Syrup
• 50ml Gold Rum, I use Bumbu Original
• 200ml Dorset Ginger Stromg
• Ice to stir

Macerated Apricot Syrup

• 200g Fleshy Apricots, plus extra to garnish
• 2 Sticks Lemongrass, plus extra to garnish
• 4 Makrut Lime Leaves, plus extra to garnish
• 2tbsp Light Muscovado Sugar
• 1Lime, juiced

Instructions

1. Begin with the maceration, roughly chop the apricots and makrut lime leaves, bash the lemongrass and chop into pieces and tumble into a bowl. Stir through the sugar, lime juice and leave to macerate for 6 hours at room temperature.
2. Squash the maceration with a fork to extract any extra syrup then strain through a muslin. Transfer to s sterile bottle and pop in the fridge. The apricot pulp is delicious with meringues and whipped cream or on top of ice cream.
3. When ready, add the measured apricot syrup for one drink along with the rum to a rocks glass with 3 ice cubes, top with the Dorset Ginger and stir to combine. Garnish with extra apricot, lemongrass and makrut lime and serve immediately
