Maraschino Cherry Sea Salt Blondies

Sweet, jewel-like cherries hide inside soft, squidgy centres, while flaky sea salt balances every bite. A little nostalgic, a little indulgent, and best enjoyed warm with a cup of tea by the cottage fire.

Ingredients

• 200g Caster Sugar
• 30g Light Muscovado Sugar
• 1tbsp Vanilla Bean Paste
• 150g Unsalted Butter
• 275g White Chocolate, chopped
• 2 Large Eggs, room temperature
• 180g Plain Flour
• 70g Almond Flour
• 200g Maraschino Cherries, drained, syrup reserved (I use Starlino)
• 1 1/2 tsp Sea Salt Flakes

Instructions

1. Preheat oven 160C. Grease and line a 9” brownie tin, set aside in the fridge.
2. Melt the butter with both sugars and the vanilla until homogeneous and dissolved. Add 225g White chocolate and stir until melted.
3. Whisk in the eggs and fold in the flour, almond flour and 1tsp sea salt flakes.
4. Fold through the drained cherries and remaining white chocolate and pour into your tin. Sprinkle with the remaining sea salt and a small drizzle of cherry syrup.
5. Bake for 30-35 minutes until golden but fudgy. Cool completely in the tin then chill for at least 4 hours before cutting into 16 squares.
