Pinang stole my heart, The food, the people, the culture, everything left me lost for words to describe the sheer beauty that envelops you like a sweet caress. This mocktail takes me there, fresh, tropical, and utterly sumptuous.

Ingredients

Coconut Syrup

• 100g Coconut Sugar
• 100g Water

For One Drink

• 250ml Pineapple Juice
• 20ml Zero ABV Rum (optional)
• 10ml Coconut Syrup
• 3cm Ginger, grated and juice squeezed.
• 5ml Lime Juice
• 4 Drops Coconut Aminos
• Pineapple leaves and dried pineapple to serve.

Instructions

1. Begin the day before with the syrup. Add the sugar and water to a small pan and dissolve over a low heat. Once dissolved, increase the heat and boil for 3-5 minutes or until syrupy. Allow to cool then store in a bottle in the fridge.
2. When ready, combine all the ingredients in a Boston shaker with 5 cubes of ice. Shake until the sides of the shaker feel cool then strain into a glass. Garnish with dried pineapple and pineapple leaves and serve straight away.
