Sticky Toffee, Pear & Pecan Moonshine

 

My go-to will always be savoury over sweet. But every now and then, my palate craves something sweet, but with depth. I would always forgo a marshmallow or meringue over the burnt notes of caramel and toffee, you see, they have layers, not just sweet for the sake of being sweet.

This drink is the perfect balance, a high proof alcohol allows enough of a warmth to cut through the sweetness of sticky toffee. Pear adds a welcome fruity kick whilst pecans are the ideal earthiness, to ground us if you like.

I use a ready-made flavoured moonshine, but you can either make your own by adding toffees to over proof vodka, sealing and running in a hot cycle of a dishwasher (yes you read that right….) and allowing to cool before infusing.
