Strawberry, Wildflower Honey & Silk Chilli Sorbet, refined sugar free

As summer creeps in, nothing gives me more joy than a midday meander round the garden, picking what produce the sun has plumped into ripening. But as all home growers know once a crop is ripe…its ripe and you often have a glut of one thing or another.

 

Whilst I do share some with friends and neighbours, for me, it’s all about preserving the taste of summer, so it can be enjoyed in those dark months replete with root vegetables and broths.

 

Dehydrating, pickling, roasting and sorbets are my favourite ways to preserve my little gems, this sorbet Is such a party for the palate and best of all, it has no refined sugar.

 

The key to its silky texture lies in that final blitz, which breaks down any ice crystals into that velvet like creamy texture.
