Vegan Jaggery Ginger Cookies

Ingredients

• 120g Vegan Butter
• 200g Packed Jaggery
• 20g Caster Sugar
• 1tsp Vanilla Extract
• 1tbsp Ginger, ground
• ½ tsp Salt
• 50ml Plant Milk
• 200g Plain Flour
• 1tsp Baking Powder
• 90g Dark Chocolate Chunks

Instructions

1. Line two baking trays with non-stick paper.
2. Add the butter and both sugars to either a large bowl or the bowl of a stand mixer. Cream together until the sugar has dissolved into the butter, 3-5 minutes.
3. Add the Vanilla, salt &plant milk and gently mix in.
4. Whisk together the flour, ginger,and baking powder until homogenous. Mix this into the butter mixture until you have a rough dough. Add the chocolate and mix again.
5. Weigh the dough and divide into10 equal portions, rolling each into a ball.
6. Pop the trays into the freezer for 2 hours to allow the dough to chill and hydrate, leaving them in the fridge for 12 hours also works.
7. Before the time is up, preheat oven 180C. Bake the cookies for 15-20 minutes or until lightly golden and chewy. Allow to cool on the trays for 5 minutes before transferring to a cooling rack.
