Mermaid Gin adds the perfect notes of fresh citrus, tinged with salinity and pepper, a nod to its coastal provenance. One to sip as the evenings extend into the night air.

Ingredients

For One Drink

• 1tsp Fresh Peas
• 2 Lime Wedges
• 20ml Green Herb Syrup
• 50ml Mermaid Gin
• 200ml Soda to top up.

Green Herb Syrup

• 100g Caster Sugar
• 100ml Water
• 1tbsp Fresh Peas
• 1 Sprig Tarragon
• 2 Sprigs Mint
• Handful Foraged Cleavers
• Ice to serve.

Instructions

1. Begin with the syrup. Add the sugar, water, and peas to a small pan. Heat over a low heat until the sugar has dissolved then increase the heat to a boil. Boil for 3-5 minutes or until syrupy then remove from the heat. Add the herbs and allow to cool to room temperature. Set aside to infuse for 8 hours.
2. Once ready, strain into a sterile jar and pop in the fridge to chill.
3. For one drink, add the peas, lime wedges and syrup to the base of a glass and crush with a muddler. Add the gin and mix well.
4. Add a few ice cubes and top up with the soda water gently stir with a bar spoon before serving straight away.
