Anise & Pink Pepper Persimmon Bellini

Ingredients

• 4 Ripe Persimmon, cut into chunks
• 120ml Peach Brandy
• 1tsp Pink Peppercorns
• 3 Whole Star Anise
• 50g Light Muscovado Sugar
• 1 Bottle Chilled Rose Sparkling Wine

Instructions

1. Add the Persimmon flesh and Brandy to a blenderand blitz until smooth. Add to a sterile kilner jar, along with the pink peppercorns and anise and leave to infuse overnight.
2. When ready to serve, add 1 tbsp Light muscovadosugar into a champagne flute along with 60 ml Persimmon Puree. Add a few pink peppercorns, a star anise and top up with sparkling wine.
3. Serve immediately
