Smoked Cauliflower & Garlic Soup With Olive Pistachio Crumb

Ingredients

• 1 large Cauliflower, cut into florets
• 2 Cloves Garlic, minced
• 3 tbsp Olive Oil
• 2 small Potatoes, peeled and chopped into pieces
• 2 White Onions, finely sliced
• 650ml Vegetable Stock
• 100ml Cloudy Apple Juice
• 2 tsp Cumin Seeds
• Sea Salt & Cracked Black pepper
• 25g Shelled Pistachios, roughly copped
• 50g Green Olives, pitted & roughly chopped
• Handful Fresh Parsley, chopped
• Vegan Yogurt to serve

Instructions

1. Preheat Oven 200C. Add 1/3 of the Cauliflower to a roasting tin along with 1tbsp Olive oil, the pistachios, and the green olives. Season with salt, pepper & cumin seeds, and tumble everything together.
2. Roast for 12-15 minutes or until just beginning to char, set aside.
3. Add the remaining 2tbsp Olive Oil to a large potand heat over a medium heat. Add the onions and potato, along with the garlicand sweat until sweet and beginning to soften.
4. Remove from the heat and insert the nozzle of asmoking gun and smoke for 5 minutes. If you don’t own a smoking gun. Pop apiece of hot coal in a heatproof bowl and add to the pot, drizzle with oil, cover with a lid and sit for 5 minutes before removing the bowl and the coal.
5. Once smoked, add the stock and apple juice, and bring to a simmer. Cook 10-15 minutes or until everything is soft. Blend to a puree, taste, and adjust the seasoning with salt and pepper.
6. Ladle the soup into warmed bowls, top with some of the cauliflower, olive crumb and swirl with yogurt & olive oil. Serve immediately
