Apple Pie Manhattan

Ingredients

For One Drink

• 40ml Scotch
• 15ml Sweet Vermouth
• 15ml Apple Juice
• 10ml Maple Syrup
• 2 Dash Orange Bitters

For The Cinnamon Maple Foam

• 120ml Maple Syrup
• 180ml Filtered Water
• 120ml Egg White
• 30ml Lemon Juice
• 1 tsp Soy Lecithin
• 1 tsp Ground Cinnamon
• Dried Apple & Pastry Crumbs to serve

Instructions

1. Begin with the foam, add everything to a large bowl and stir until homogenous. Using an electric whisk, whip until stiff peaks form. Spoon into a piping bag and pop into the fridge.
2. For one drink, add all ingredients to a mixing glass with 3 ice cubes and stir for 30 seconds clockwise to combine.
3. Strain through a hawthorn strainer into a chilled glass.
4. Pipe over some maple foam, sprinkle with pastry crumbs and top with a slice of dehydrated apple.
5. Serve immediately.
