Bramble & Purple Basil Cupcakes

As the days begin to shorten and the heat haze hangs in the air, the local Hedgerows become abundant with their black jewels, just crying to bleed onto impatient fingers.

They are at their sweetest in late afternoon, early evening as they have had a chance to sweeten in the warmth of the day.

Purple Basil is the perfect herbaceous foil to their tart sweetness.

Bramble & Purple Basil Cupcakes

Ingredients

• 180g Unsalted Butter, room temperature, Plus 200g to Frost
• 180g Golden Caster Sugar
• 3 Eggs, room temperature
• 180g Plain Flour
• 1 ¼ tsp Baking Powder
• ¼ tsp Fine Salt
• 2 Limes, zest & juice
• 4 Leaves Purple Basil, chiffonade, plus extra to garnish.
• 120g Brambles, plus 120g For Decoration
• 420g Icing Sugar
• 1-2tbsp Whole Milk

Instructions

1. Preheat oven 160C. Line a 12-hole Muffin tin with cases and set aside.
2. Beat the butter with the sugar for 5-6 minutes or until pale and fluffy. Add the eggs one at a time, beating well between each addition until homogenous.
3. Whisk together the flour, baking powder, salt, zest,and sage in a bowl. In a jug, gently crush the brambles with the lime juice.
4. Add the flour and bramble mixtures in halves,alternating between each and gently folding in until combined, taking care not to over mix. Fold in the Basil Chiffonade
5. Divide the mixture equally between your prepared cases and bake for 20-25 minutes or until risen and springy. Allow to cool for5 minutes then transfer to a wire rack to cool completely.
6. Mash the brambles for the decoration with a fork and set aside. Add the butter and icing sugar to the base of a stand mixer and beat for 3-5 minutes. Add the bramble mixture and fold through, adding enough milk to make it smooth.
7. Pipe or spoon onto your cupcakes, garnishing with extra Basil and brambles if liked..
