Apricot Whisky Sour

The sweetness of Apricots, the unctuous velvet mouthfeel of a sour. This is what summer cocktails were made of.

Ingredients

• 50ml Whisky
• 25g Apricot Jam
• 20ml Lemon Juice
• 1 Egg White
• Fresh Apricot Slices to serve
• Ice to Shake

Instructions

1. Add the Whisky, Jam and Lemon Juice to a Boston Shaker. Add the Egg White last to prevent the proteins from setting in the acid.
2. Dry Shake for 30seconds then adds 5 Ice Cubes. Shake 30 seconds more, then strain through a Hawthorn Strainer into a coupe.
3. Serve Immediately.
