Roasted Strawberry Cordial

Life isn’t always about Cocktails. This cordial is the perfect base for mocktails, cocktails or kids’ drinks. Anall-round summer crowd pleaser.

Ingredients

• 500g Strawberries, hulled
• 80g Caster Sugar
• 230ml Water
• 2 Star Anise
• 1 lime, juiced

Instructions

1. Preheat oven 180c,alternatively fire up your Pizza Oven or BBQ.
2. Mix the berries with the sugar, water & star anise and pop into a roasting tin, cover with foil and roast for 15-20 minutes or until the berries are soft.
3. Mash the berries with a fork and strain through a muslin, squeezing to process all the liquid.
4. You should end up with350-400ml Juice. For every 350ml, add 75g Sugar and add back into your pan.Gently heat to dissolve the sugar, remove from the heat, and add the lime juice. Taste and add a little more if needs be.
5. Pour into a sterile bottle and store in the fridge. Dilute 1:8 with either still or sparkling water, or as a syrup for cocktails.
6. This will keep for 2 weeks, but it never lasts that long!
