Cider Poached Pears With Chocolate Tonka Maple Water Ganache

Cider Poached Pears With Chocolate Tonka Maple Water Ganache

‘Life starts again when it gets crisp in the Fall’ Autumn skies and Pumpkin Pies, there is something so comforting about this time of year. Nothing can beat the steamy windows of a kitchen filled with the warm fragrance of Pears poaching in Spiced Cider.

Ingredients

For The Pears

• 800ml Dry Hard Cider
• 50g Light Muscovado sugar
• 2 Cinnamon Sticks
• 3 Star Anise
• 4 Firm Pears

Tonka Maple Water Ganache

• 200g Dark Chocolate
• ½ Tonka Bean, grated
• 100ml Water
• 50ml Maple Syrup

Instructions

1. Add the Cider, Sugar, Cinnamon, and Star Anise to a large pan. Heat over a low heat until the sugar has dissolved.
2. Peal the pears, leaving the stalk intact. Add to the poaching liquid, covering with some grease proof paper.
3. Simmer for 30-40 minutes until the pears are just tender to the knife.
4. Remove from the liquid and allow to cool. There served Cider is fantastic strained as a Warm Winter Toddy.
5. For the Ganache, add your Chocolate and water to a heatproof bowl set over a pan of barely simmering water. Taking care not to get any excess steam inside the bowl, carefully stir until the mixture is smooth and melted.
6. Remove the pan from the heat, stir in the maple syrup and tonka beans. Transfer to a jug.
7. Serve the pears in bowls, with copious drizzles of sauce.
