As happy with ice and sparkling water as it is warm in a huggable mug, this is one to keep in store.

Cinnamon Bramble Cordial

As the hedgerows become laden with their inky bounty and the balmy breeze of summer is replaced with the chill edge of Autumn’s zephyr, there is nothing quite as warming as this cinnamon laced cordial.As happy with ice and sparkling water as it is warm in a huggable mug, this is one to keep in store.

Ingredients

• 750g Ripe Brambles
• 3 Cinnamon Sticks (not Cassia) broken
• 1 Lemon, zest & Juice
• 350g Granulated Sugar

Instructions

1. Add the brambles, cinnamon& lemon zest in a pan and heat over a medium low heat for 10-15 minutes, stirring with a wooden spoon until the fruit breaks down.
2. Strain through a muslin, taking care not to push too hard or else your cordial will be cloudy. Place the juice into a large saucepan and add the sugar. Precisely how much depends on how juicy your fruits are, you are looking for 350g Sugar per 500ml Liquid.
3. Heat over a low heat until all the sugar has dissolved then bring to a boil. Once it boils, leave for 20seconds then remove from the heat. Stir in the lemon juice then pour into sterile bottles.
4. Once cold, chill and dilute 1:5 cordial to water.
