Cinnamon Honey Chocolate Chip Muffins

Ingredients

• Dry:
• 280g plain flour (2¼ cups)
• 2 tsp baking powder
• ½ tsp baking soda
• ½ tsp fine sea salt
• 1½ tsp ground cinnamon
• 150g soft light brown sugar (¾ cup)
• Wet:
• 120g unsalted butter, melted and slightly cooled (½ cup)
• 100g runny honey (about ⅓ cup)
• 2 large eggs, room temperature
• 180ml buttermilk or whole milk with 1 tsp lemon juice (¾ cup)
• 1½ tsp vanilla extract
• Add-ins:
• 150g dark or milk chocolate chips (1 cup)
• Extra honey + cinnamon sugar for topping (optional)

Instructions

1. Preheat & Prepare:
2. Heat oven to 190°C (375°F) and line a 12-hole muffin tin with paper cases. For tall muffin tops, grease only the top of the tin around the cases so the muffins can rise freely.
3. Mix Dry Ingredients:
4. In a large bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon and brown sugar until evenly combined.
5. Combine Wet Ingredients:
6. In a separate bowl or large jug, whisk the melted butter, honey, eggs, buttermilk, and vanilla until smooth and glossy.
7. Bring Together:
8. Pour the wet ingredients into the dry and fold gently using a spatula. Stop when there are still streaks of flour visible — overmixing makes them tough!
9. Add Chocolate Chips:
10. Fold in the chocolate chips just until evenly distributed.
11. Fill the Cases:
12. Divide the batter between the muffin cups — they should be filled almost to the top for that classic dome.
13. Optional Topping:
14. Drizzle a little honey over each muffin and sprinkle with cinnamon sugar for a sticky-crisp finish.
15. Bake:
16. Bake for 18–22 minutes, or until golden and a skewer inserted in the centre comes out clean (a few melted chocolate streaks are fine!).
17. Cool & Serve:
18. Let cool in the tin for 5 minutes before transferring to a wire rack. Serve warm with a little butter or extra drizzle of honey.
