Clementine, Cayenne & Hazelnut Biscuits

Ingredients

• 110g Unsalted Butter, soft
• 120g Caster Sugar
• 100g Light Muscovado Sugar
• 120g Ground Hazelnuts
• 1tbsp Fresh Clementine Zest
• ¼ tsp Cayenne Pepper
• ½ tsp Baking Powder
• 1/4tsp Sea Salt Flakes
• 150g Plain Flour
• Icing Sugar to dust

Instructions

1. Add the butter and both sugars to the bowl of a stand mixer. Beat for 5-8 minutes or until pale and fluffy.
2. In a separate bowl, whisk the hazelnuts, zest,cayenne, baking powder, salt, and flour. Add this to the butter and mix to forma dough.
3. Roll the dough between two sheets of non-stick paper and pop in the fridge for 2 hours to allow the flour to hydrate.
4. Preheat oven 160C. Line two n=baking trays with non-stick paper. Stamp out shapes from the dough using a cookie cutter. Bake for 10-12 minutes or until golden. Allow to cool on the trays before dusting with icing sugar.
