There’s something about September that makes me want to bake.
The light softens, the evenings begin to draw in, the garden offers up the last of its summer abundance, and suddenly I’m craving thick slices of cake, steaming mugs of tea and nowhere particularly important to be.
This Healthier Zucchini, Cacao & 5 Spice Loaf Cake feels like that little moment between seasons.
Grated zucchini keeps the crumb beautifully soft, apple brings gentle sweetness, five spice adds that first whisper of autumn and roasted almonds tumble through the loaf for a little crunch. Raw cacao & dark chocolate meld into that unctuous note. Made without dairy or refined sugar, it’s the sort of everyday cake that feels wholesome without ever feeling like it’s missing the good bits.
And perhaps that’s my favourite kind of baking, taking what’s growing around me, keeping things simple and turning it into something that makes home feel just a little cosier.
