Lemon Blossom Tartlets

Embracing all that is delicate about the new growth of Spring. Sweet Citrus with a floral undertone, the perfect addition of Afternoon Tea, or dessert. There is one caveat, these are to be enjoyed in the incandescent light of the spring sun as she slips under the soft blanket of dusk.

Ingredients

• 15 Mini pastry cases, made to your favourite recipe, GF works well.
• 100g Caster Sugar
• Handful Apple, Pear & Cherry Blossom Flowers (taking care not to take too many and affect the fruit crop)
• 4 Egg Yolks
• 100ml Lemon Juice
• 25ml Lime Juice
• 75g Unsalted Butter, cut into small cubes.

Instructions

1. Begin the day before with the sugar. Mix through the blossoms and set aside in an airtight jar to infuse for 24 hours.
2. The next day, smell the sugar, it should smell gently floral and sweet. If so, pick out the blossoms and discard, if not, leave a few hours more.
3. Add the sugar, egg yolks, lemon, and lime juice to a bowl set over a pan of simmering water. Whisk for 3-5 minutes or until the mixture begins to thicken.
4. Add the butter and continue to whisk until melted.
5. Continue cooking over a low heat for 12-15 minutes or until the proteins in the egg yolks begin to set and the mixture becomes thick. Take care to whisk to avoid any lumps forming.
6. Once thickened, pour the warm curd into the pastry cases. Gently shake to level and allow to cool for 15 minutes before transferring to the fridge.
7. Chill for 4 hours before serving with any spare blossom sprinkled over.
