Rosemary Lime Daiquiri

Ingredients

For One Drink

• 60ml Ruta Maya Coco Lime White Rum
• 25ml Fresh lime juice
• 15ml Rosemary syrup (see below)
• Dash of orange bitters (optional, for warmth)
• Sprig of rosemary and lime zest twist, to garnish

For the Rosemary Syrup

• 100ml water
• 100g golden caster sugar
• 2 large fresh rosemary sprigs

Instructions

1. Combine all ingredients in a saucepan and heat gently until sugar dissolves.
2. Simmer for 3–4 minutes, then remove from heat and let steep until cool.
3. Strain and store in the fridge for up to 2 weeks.
4. Cocktail Method:
5. Add rum, lime juice, rosemary syrup, and bitters (if using) to a shaker filled with ice.
6. Shake vigorously until the tin is frosty — about 15 seconds.
7. Fine strain into a chilled coupe or Nick & Nora glass.
8. Garnish with a rosemary sprig gently slapped to release its oils, and a twist of lime zest over the surface.
