Ingredients

For One Drink

• 30ml Gray Whale Gin
• 30ml Bianco Vermouth (like Cocchi Americano or Lillet Blanc)
• 30ml Suze (or a gentian aperitif of your choice)
• 1 tsp Pumpkin Spice Syrup (see below)
• Orange twist, star anise or dried citrus slice, to garnish

Pumpkin Spice Syrup

• 100g soft light brown sugar
• 100ml water
• 2 tbsp pumpkin purée
• 1 cinnamon stick
• 3 cloves
• 2 allspice berries
• A pinch of grated nutmeg
• Small piece of fresh ginger (sliced)

Instructions

1. Combine everything in a small pan and bring to a simmer.
2. Stir until sugar dissolves, then let simmer gently for 5–7 mins.
3. Remove from heat, cool, then strain into a bottle or jar.
4. Store in the fridge for up to 2 weeks.
5. Cocktail Method:
6. Add gin, vermouth, Suze, and syrup to a mixing glass filled with ice.
7. Stir for about 30 seconds until well chilled and diluted.
8. Strain into a rocks glass over a large cube (or serve up in a chilled coupe if you fancy).
9. Garnish with an orange twist, a star anise pod, or a thin dehydrated pumpkin slice if you’re feeling extra.
