Tomato Salad, Jalapeno Mint Oil, Fried Capers

Some recipes revel in their simplicity. As the heat of summer hits, cooking loses its appeal. Throw this together, grab some crusty bread and dwell long into the balmy evening

Ingredients

• 400g Heritage Tomatoes, chopped
• 3 Jalapenos, chopped
• 40g Fresh Mint
• 280ml Olive Oil
• 2 tbsp Capers, drained
• 100ml Sunflower Oil

Instructions

1. Begin with the oil. Add the jalapenos, mint and oil to a blender and blend 3 minutes or until very smooth. Transfer to a fine sieve lined with muslin and leave for 2 hours or until everything has dripped through. Don’t be tempted to squeeze and you will end up with cloudy oil.
2. Heat the sunflower oil in a shallow pan, dry the capers thoroughly and fry until beginning to pop. Drain on kitchen paper and set aside.
3. Make sure your tomatoes are fresh and at room temperature. Tumble into a bowl, cover with oil and sprinkle with the capers.
4. Stand for 30 minutes to infuse before serving. Crusty bread us a must!
