Strawberry & Pimms No Bake Cheesecake

Ingredients

For the Base

• 250g Oat Biscuits
• 100g Unsalted Butter
• 1/8 tsp Fine Salt
• 2 Cardamom Pods, crushed

For the Filling

• 250g Double Cream
• 250g Mascarpone
• 60g Icing Sugar
• 1 tsp Vanilla Bean Paste
• 25ml Pimm’s
• 1 tsp Lemon Juice

For the Topping

• 350g Fresh Strawberries
• 2tbsp Pimm’s
• 3 tbsp Caster Sugar
• ½ Cucumber, cut into ribbons
• Fresh Mint Leaves

Instructions

1. Begin with the base .Lightly grease an 8” Spring form cake tin and line the base. Crush the biscuits to a fine rubble and mix with the remaining ingredients until homogenous. Press into the tin until smooth and compact. Chill in the fridge while you make the filling
2. Whip the cream to soft peaks then carefully fold in the mascarpone and sugar. Add the Pimm’s and Vanilla, along with the lemon juice and carefully fold that in too
3. Spoon the filling over the base, smooth and chill in the fridge for at least 4 hours
4. For the topping, add the berries sugar and Pimm’s to a bowl and set aside for 1 hour to macerate
5. Carefully release the cheesecake from the tin onto a serving plate, top with the berries and a little of their juice along with some cucumber & fresh mint. Serve with a glass of Pimm’s and a tennis match…
