Wild garlic capers… flavour bombs!

A taste of spring during the long winter months, these little flavour bombs are a party on the palate

Ingredients

• 8tbsp Wild Garlic Seed Pods
• ½ tsp Sea Salt Flakes
• 1tbsp Caster Sugar
• 250ml White Wine Vinegar

Instructions

1. Pick the seed pods and remove any bugs or dirt by shaking. Using herb snips, cut the pods from their stems into a sterile mason jar.
2. To a pan, add the salt, sugar, and vinegar. Heat over a low heat until dissolved and homogenous.
3. Pour the hot pickling liquor over the seed pods and allow to cool to room temperature. Once cool store in the fridge for 4 weeks for the flavours to infuse. They can be used after 4 weeks but are better kept for 2-3 months for maximum flavour. They will keep for a further 3 months when open if stored in the fridge.
