Bramble & Wild Marjoram Ninja Creami Swirl Ice Cream

There is a particular kind of magic to the turning point between summer and autumn, when the hedgerows become stained with purple and brambles tumble through the lanes, almost begging to be gathered.

This ice cream is my little ode to that moment. Plump, inky brambles bring their familiar sweet-sharp fruitiness, while wild marjoram, gathered from the hedgerows, is gently steeped into the milk to lend the quietest whisper of something green, floral and beautifully untamed.

Made simply in the Ninja Creami, it is light, creamy and wonderfully refreshing, with vanilla softening the edges and allowing those foraged flavours to shine.

It tastes of scratched arms and purple fingertips. Of baskets carried home a little fuller than intended. Of standing in a Dorset hedgerow eating the ripest berries before they ever have a chance to reach the kitchen.

Brambles for me signify the seasonal shift, where the evenings begin to cool and the birds settle in the trees above.

Wild marjoram has a surprisingly delicate floral warmth when infused into milk. Keep the infusion gentle the intention isn't for the ice cream to taste overtly herbal, but for the marjoram to sit quietly behind the brambles, giving their deep, jammy flavour a wonderfully wild edge.
