Healthier Strawberry Shortcake Ninja Creami Ice Cream

Creamy vanilla ice cream rippled with strawberries, strawberry preserve and buttery little nuggets of shortbread.

There are some flavours that seem to belong to summer.

Strawberries warmed by the sun, vanilla, and the buttery crumble of shortbread eaten with fingers straight from the tin. This is my lighter little nod to strawberry shortcake — made in the Ninja Creami with a simple skimmed milk base, but still tasting gloriously creamy and indulgent.

The frozen strawberries turn the ice cream the prettiest blush pink, while strawberry preserve gives little pockets of jammy sweetness. And because no strawberry shortcake should be entirely sensible, a crumbled shortbread biscuit gets folded through at the very end.

Simple, nostalgic and just a little bit magical the sort of thing that feels perfectly at home at Shortcake Cottage.

Ingredients

• 300ml skimmed milk
• 2 tbsp skimmed milk powder
• 1 tsp pure vanilla extract
• ¼ tsp xanthan gum
• 1 large handful frozen strawberries
• 2 tbsp strawberry preserve
• 1 shortbread biscuit, roughly broken into little pieces

Instructions

1. Add the skimmed milk, milk powder, vanilla extract and xanthan gum to a blender. Blend until completely smooth and the milk powder and xanthan gum are fully incorporated.
2. Add the frozen strawberries and 1 tbsp of the strawberry preserve, then blend again until smooth and beautifully pink.
3. Pour into your Ninja Creami tub, making sure not to exceed the MAX FILL line. Secure the lid and freeze on a level surface for at least 24 hours, or until completely solid.
4. Once frozen, remove the lid and place the tub into the Ninja Creami. Process using the Lite Ice Cream setting.
5. If the mixture looks slightly powdery or crumbly after the first spin, add a small splash of skimmed milk and Re-Spin until creamy.
6. Make a little well down the centre of the ice cream and add the remaining 1 tbsp strawberry preserve along with the roughly broken shortbread biscuit.
7. Run the Mix-In programme until the shortbread and little ribbons of strawberry preserve are scattered throughout.
8. Spoon into a bowl and finish with a few extra strawberry pieces if you fancy.
