Ingredients

Punch Base

• 1 bottle dry red wine (Merlot or Shiraz)
• 300ml pomegranate juice
• 150ml spiced rum (or Cognac for a more opulent finish)
• 100ml orange liqueur (like Grand Marnier or Cointreau)
• 500ml sparkling apple cider (or prosecco for sparkle)
• Juice of 2 oranges
• Juice of 1 lemon

Spiced Syrup & Garnishes

• 150g golden caster sugar
• 150ml water
• 1 cinnamon stick
• 3 cloves
• 1 star anise
• Strip of orange peel
• A few crushed pink peppercorns (optional)
• Garnishes (as seen in the images):
• Sliced red & green apples
• Sliced oranges & lemons
• Pomegranate seeds
• Blood orange slices (if available)
• Ice block with frozen fruit inside (optional but stunning for display)

Instructions

1. Make the Spiced Syrup:
2. In a saucepan, combine sugar, water, and spices. Gently simmer for 10 minutes, then remove from heat and let infuse until cool. Strain and chill.
3. Build the Punch (in a copper pot if you can):
4. In a large punch bowl or copper cauldron, pour in the wine, pomegranate juice, spiced syrup, orange liqueur, and citrus juices. Stir gently.
5. Just Before Serving:
6. Add ice block or large cubes, sparkling apple cider (or prosecco), and all your garnishes: slices of apple, orange, lemon, and pomegranate seeds.
7. To Serve:
8. Ladle into coupe or goblet-style glasses as shown, making sure each glass gets a slice of fruit and a few seeds. Optional: top with a dash of prosecco for an effervescent touch.
9. Tips & Twists:
10. For a smokier depth, swap spiced rum for bourbon or add a splash of mezcal.
11. Make a non-alcoholic version using red grape juice, hibiscus tea, orange juice, and alcohol-free sparkling cider.
12. Serve with a copper bar spoon and shaker nearby for extra vintage flair.
