A twist on the Spanish classic, Tinto de Verano, a refreshing, effervescent sip but lightened with Rosé wine. Simple to make and even more simple to drink, I have added a simple rose syrup for a touch of sweetness, it makes for an all round crowd pleaser.

Rosé de Verano

Ingredients

• 400g Peaches, stoned and sliced
• 150ml Gin
• 250ml Rosé Wine
• 250ml Soda Water, chilled
• 40ml Rose Syrup
• Ice to serve

Instructions

1. Add the gin, wine, peaches and rose syrup to a jug and muddle with a spoon, add the ice and stir again. Top up with Soda and give it a quick stir before poruing into glasses and sipping under the balmy sunlight.
