Negroni will always be my go-to. In those moments when the bar person asks for your order, like a rabbit stuck in headlights, your mind goes blank, but I can always count on my subconscious operating my voice box and ordering a Negroni. You see, your body knows what it likes, that bitter, spirit forward sip will always have my heart.

Come the warmer months, a Negroni seems more apt curled under a rug by the hearth, so I bring it in line with the seasons. Fresh Lime syrup, a citrus floral forward gin with a crisp white amaro and suddenly it’s the freshest sip of spring and summer.

Ingredients

For One Drink

• 30ml Floral/ Citrus Forward Gin (you want less Juniper here)
• 30ml Lillet Blanc
• 30ml Cocchi Americano Blanco
• 5ml Lime Syrup
• 2/3 Ice Cubes
• Citrus Flower to Garnish

Lime Syrup

• 200g Caster Sugar
• 50ml Water
• 150ml Lime Juice

Instructions

1. Begin with the lime syrup. Add the sugar, water and lime juice to a small pan and dissolve over a low heat. Once dissolved, bring to a boil and boil for 3-5 minutes, or until syrupy. Set aside to cool to room temperature then strain into a bottle and refrigerate.
2. When ready, add all the ingredients for one drink to a mixing glass. Add 3 ice cubes and stir clockwise until the glass feels chilled. Strain into a rocks glass filled with 2-3 ice cubes and garnish with a citrus flower. Serve immediately.
